Made yet another winner this evening. You guys should check this out it’s pretty delicious actually. Here is the original recipe below however I will show you what I did to change it and make it any better at the end.

Ingredients

  • 1 head cauliflower, graded
  • one package of shiitake mushrooms
  • two shallots, minced
  • 1 tablespoon of fresh ginger, minced (I used the stuff in the tube)
  • 3 tablespoons of coconut aminos (or soy sauce… If you must)
  • 3 eggs
  • coconut oil (or other oil if you don’t have)
  • Steak! (Or meat of choice – Chx or Shrimp)
  • sesame oil for garnish*
  1. Grate the cauliflower with a food processor by pulsing it.
  2. Slice the green onions and mushrooms and minced the shallots.
  3. He old are just skillet or wok and add a spoonful or two of the oil. Sauté the mushrooms, shallots and ginger for three minutes or until they begin to soften.
  4. Add the cauliflower, green onions and coconut aminos.  Sauté for five minutes.
  5. Push the veggies to the side of the skillet and create a well. Crack the eggs into the well in scramble (yes, kind of like you’d do with fried rice). Stir everything to combine. Serve into a bowl and top with the meet of your choice. (The steak was fantastic, but I can also see using shrimp as well.)
  6. * garnish with a drizzle of sesame oil. (do not cook with the sesame oil as it is high in omega 6′s and will oxidize easily at high heat).

First off, I want to say that this dish was much better than expected and super full of flavor. The eggs were a next your bonus on texture as well as adding protein.  We are definitely going to be making this again!  Now, a few changes to the original recipe…

I only used half of the cauliflower head instead of a full. It would’ve been way too overkill and would’ve overpowered the flavors of the mushrooms and other veggies. If you need more than two servings then double the quantity of the veggies other than the cauliflower. (I will do that next time). I also used soy sauce instead of the coconut aminos, although it’s not as healthy it did the flavor job just as well. Other than that, this was an amazing dish that was superhealthy and super delicious. Full of flavor. Super savory. Super easy.
