Came up with this one at lunch time today because I was in a huge rush and it came out awesome!!! Makes 4 servings…Plus, 18g of protein per serving.
Ingredients:
- 12oz package of peeled frozen shrimp
- 2 tablespoons of blood orange flavored olive oil
- 1-2 cloves of minced garlic
- 1/2cp of chopped red bell pepper
- 1/2cp. Of chopped yellow bell pepper
- 1 cup of chopped asparagus
- 16oz canned artichoke hearts (drained)
- 1 teaspoon curry powder
- 1 teaspoon crushed red pepper
- S&P to taste
(Feel free to mess with the seasoning and vegetable proportions to your liking. You can also add a bit of orange zest if you do not have orange olive oil)
- Heat the olive oil on medium-high in a skillet.
- Add your veggies and seasoning and sauté for 4 to 6 minutes. Stirring occasionally.
- Stir in your thawed shrimp and as the shrimp begins to release water turn your stove to high.
- As the water begins to reduce remove from heat.
Let sit for a minute or so. Serve and enjoy!
