Whitney used to make this for me all the time about a year or so earlier and it completely escaped my mind (and my stomach).  But I remembered it the other day and we made it again and so I wanted to share it with all of you.

If you have of oregano, tomatoes, and peppers in your garden like me, (which I know some of us do and some of us do not) this recipe can be super easy.  However you can also just add about any vegetables and this recipe will still be quite easy and tasty.

Ingredients: 

  • 2 pounds medium shrimp, peeled and deveined
  • zest and juice of one lemon
  • 2 TBS fresh oregano, chopped
  • 5 cloves garlic, minced
  • 3 TBS olive oil + 1 additional for later
  • 1 medium onion
  • 1 red bell pepper, sliced into strips
  • 4 tomatoes, seeded and chopped
  • splash of white wine
  1. Combine shrimp, zest and juice, oregano, garlic, and O.O.
  2. Marinate for 15 min.
  3. Heat a large skillet over MED heat, add other O.O., peppers and onion and cook til translucent.
  4. Increase heat to MED-HIGH and add shrimp mixture. Stir often. Only shrimp has turned pink add the tomatoes and wine.  (Feel free to drink the rest of the wine. Ha)
  5. Cook until tomatoes are just heated through.
