Barbecue Bacon-Wrapped Chicken

This quick and easy and nutritionally complete meal has something to satisfy every family member for the Memorial Day weekend. And if you have any left over chicken from the grill (or the oven), the bacon on the chicken makes it perfectly compatible for breakfast!

 

Ingredients:

  • 4 – boneless, chicken breast halves
  • 12 – slices of bacon (the real stuff!)
  • 12oz – cherry tomatoes
  • 1 bunch – scallions, cut into 2 inch pieces
  • olive oil
  • Salt and Pepper
  • Barbecue sauce (organic/non-GMO/no corn syrup)

 

Directions:

1. Preheat your grill to medium high.
2. Salt and pepper the chicken and veggies.
3. Wrap each chicken breast half with three slices of bacon and place on the grill.
4. Grill for six minutes or until the bacon begins to crisp and brown. Turn the chicken over.
5. Using a grill walk or a tinfoil wrapped, add the tomatoes and scallions to the grill.
6. Grill the chicken and the vegetables for six minutes or until the bacon is crispy.
7. Add add barbecue sauce to chicken and grill for another minute or two, or desired crispiness.
8. Plate and serve!

 

Per serving: 545 cal, 45 g protein 11 g carbs, 37 g fat

 

Note: All this can be done any oven as well using the broiler and a broiler pan or baking sheet.
